How to Microwave a Sweet Potato

2 serving   

  • 1   14 to 16 oz sweet potato or yam

Wash the sweet potato lightly to remove dirt without breaking the skin then dry with a paper towel. Pierce the skin 4 or 6 times with a fork to allow steam to escape and prevent possible bursting in oven.

Place sweet potato(s) on a paper towel and cook on high for 5 minutes. Turn the sweet potato(s) over and cook for another 5 minutes. Test sweet potato for doneness/softness by piercing a fork to the center of sweet potato. Add 2-3 minutes in microwave if sweet potato is larger or you are cooking more than one sweet potato.

Serve immediately with any (or combination) of these:
butter
butter spray
Butter Buds or Molly McButter
cinnamon
chopped pecans
brown sugar
raisins

Or, pierce the skin of a couple of medium sweet potatoes (8 oz each) 4 times on two sides with a fork; then wrap in damp paper towels and microwave for about 8 minutes; turning once after 4 minutes. Cut in half and scoop out the pulp; mash and add some butter and toasted chopped pecans. Serve.
