    |  | Hopping John - 10 servings 
 Considered good luck, Hopping John is a traditional dish of rice and beans traditionally served in the American south on New Year's Day.
 
 4 Bacon strips
 1/4 cup diced onion
 1/2 diced green bell pepper
 1/2 diced red bell pepper
 2 10 oz. packages defrosted
        black-eyed peas, (or 2 cups fresh)
 1/2 cup Uncooked white rice
 2 cups water
 Salt & pepper, to taste
 Louisiana Hot Sauce
 
 Dice bacon; brown in dutch oven until almost crisp then add with onion and peppers.Cook until the bacon is crisp and vegetables are soft. Add peas and rice; stir; then add the water. Bring to a boil, cover and simmer over very low heat about 20 minutes, until the rice is tender. Salt & pepper to taste. Add a dash of hot sauce (to taste).
