Curried Chicken

1 serving

  • 1 Tablespoon margarine or butter
  • 1 teaspoon curry powder
  • 1 Tablespoon flour
  • 3/4 cup fat-free chicken broth
  • 3 Tablespoons golden raisins
  • 1/2 cup diced cooked chicken breast
  •    salt and pepper
  • 1/2 cup hot cooked rice
  • 1 Tablespoon toasted slivered almonds

Melt the margarine in a saucepan over low heat. Add the curry powder and flour, and cook, stirring, for about 3 minutes.

Gradually pour in the broth and cook, stirring until smooth and thickened.

Add the raisins and simmer, stirring occasionally, for about 8-10 minutes. Mix in the chicken and heat gently, seasoning with salt and pepper, and more curry powder if you wish.

Spoon over hot rice and sprinkle with almonds
