Homestyle Turkey Sausage
4 servings
- 1 pound sweet italian turkey sausage
- 1/3 cup fat-free chicken broth
- 12 small red potatoes, quartered
- 2 large celery stalks, cut in 1-inch chunks
- 1 medium, thick sliced onion
- 1 green or red bell pepper, cut in strips
- 1 teaspoon dried oregano
- salt and pepper, to taste
Cut sausages in thirds. Hint: you can get a neater cut if you chill or semi-freeze sausages first.
Spray a non-stick dutch oven with cooking spray. Heat over medium-high heat about 30 seconds. Add sausage pieces, cover and cook 10 minutes or until lightly browned and no longer pink in center, turning occasionally.
Add remaining ingredients. Reduce heat to medium-low and cover. Cook 30 minutes or until vegetables are tender.
