Jerk Turkey Burgers
4 servings    
  
Jamaican seasonings and grilling bring new flavors to ground turkey.
 
-  1/3 cup couscous
 - 2 teaspoons canola oil
 - 1/2   cup chopped red bell pepper
 - 2 cloves minced garlic
 - 1 teaspoon dried thyme
 - 3/4 teaspoon curry powder
 - 3/4 teaspoon ground cumin
 - 1/2   teaspoon ground allspice
 - 1/2   teaspoon ground ginger
 - 1/2   teaspoon salt
 - 1/4 teaspoon fresh ground black pepper
 - 1/4 teaspoon spanish paprika
 -  1/8 teaspoon cayenne pepper
 - 3/4 pound Ground Skinless Turkey Breast
 - 4  whole wheat buns, split and toasted
 - 4 slices large tomato
 -     lettuce
  
In a small bowl, combine couscous with 1/2   cup water; let stand for 20 to 30 minutes, or until couscous is tender and the water is absorbed.
 
 
In a small nonstick skillet heat oil over low heat.  Add red peppers, garlic, thyme, curry, cumin, allspice, ginger, salt, pepper, paprika and cayenne. Saute for 1 minute, or until peppers are slightly softened. Set aside to cool.
 
 
Prepare the grill or preheat the broiler. In a medium-sized bowl, combine the couscous, red-pepper mixture and turkey; mix thoroughly but lightly.  Shape into 4 3/4-inch thick patties.  Grill over high heat or broil on a lightly oiled rack until broowned and cooked through, about 5-7 minutes per side. Serve on a bun with lettuce and tomato
