Turkey Stir-Fry
4 servings
- 3 Tablespoons sesame oil
- 1 Tablespoon hot chili oil
- 3/4 pound skinless turkey breast,
boneless strips
- 2 cups broccoli flowerettes
- 1 red bell pepper, medium
cut in 1/4-inch strips
- 1/2 cup scallions, cut in 2-inch pieces
- 1/2 cup fat-free chicken broth
- 1 Tablespoon soy sauce
- 1 Tablespoon cider vinegar
- 1 Tablespoon fresh ground black pepper
- 1/4 cup peanut butter
- 1/4 cup fresh chopped cilantro (or parsley)
- 1/2 cup chopped peanuts
- 10 ounces Oriental noodles, cooked (or rice)
In WOK heat oils over medium-high heat. Add turkey, broccoli, red pepper
and scallions. Cook, stirring occasionally, until turkey is fork-tender.
In
medium bowl whisk together remaining ingredients except for the cilantro,
peanuts and rice. Add peanut butter mixture to turkey mixture and cook 5-7
minutes, stirring occasionally until mixture is heated through. Stir in
cilantro and peanuts.
Serve over rice or noodles.
