Turkey Stir-Fry

4 servings

  • 3 Tablespoons sesame oil
  • 1 Tablespoon hot chili oil
  • 3/4 pound skinless turkey breast,
       boneless strips
  • 2 cups broccoli flowerettes
  • 1 red bell pepper, medium
       cut in 1/4-inch strips
  • 1/2 cup scallions, cut in 2-inch pieces
  • 1/2 cup fat-free chicken broth
  • 1 Tablespoon soy sauce
  • 1 Tablespoon cider vinegar
  • 1 Tablespoon fresh ground black pepper
  • 1/4 cup peanut butter
  • 1/4 cup fresh chopped cilantro (or parsley)
  • 1/2 cup chopped peanuts
  • 10 ounces Oriental noodles, cooked (or rice)

In WOK heat oils over medium-high heat. Add turkey, broccoli, red pepper and scallions. Cook, stirring occasionally, until turkey is fork-tender.

In medium bowl whisk together remaining ingredients except for the cilantro, peanuts and rice. Add peanut butter mixture to turkey mixture and cook 5-7 minutes, stirring occasionally until mixture is heated through. Stir in cilantro and peanuts.

Serve over rice or noodles.
