Stir Fry Ginger Chicken Breast

1 serving

  • 1 teaspoon peanut oil
  • 1 4-5oz chicken breast, cut into strips
  • 1 cup mixed stir-fry veggies
  • 2 Tablespoons light soy sauce
  • 1/4-1/2 teaspoon ginger powder
  •    freshly ground black pepper
  • 1/2 cup hot cooked rice

Heat peanut oil in a wok over medium heat. Add chicken strips to pan and saute for 3-5 minutes or until lightly browned.

Add 1 cup (or more if you wish) of stir-fry veggies and stir.

Add 2 Tablespoons of light soy sauce, 1/4-1/2 teaspoon of ginger powder and a grind or two of black pepper. Stir well and cook for about 4-5 minutes. Serve over rice.
