Parmesan Chicken Breast Nuggets Low Fat
4 serving
- 2 egg whites, slightly beaten
- 1 cup Panko (Japanese bread crumbs)
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1 1/2 lb chicken breasts, cut into 1-inch cubes
- Marinara sauce, warmed (optional)
Preheat oven to 375°.
Put slightly beaten egg whites into a shallow bowl. Combine Panko, Parmesan and salt into another shallow bowl or plate. Dip chicken pieces into the egg whites; then roll in crumbs.
Place chicken pieces in a single layer on 2 15-in by 10-in non-stick baking pans. Bake at 375° for 16-18 minutes, turning once. Serve at once with warmed Marinera sauce on the side if desired.
