Latin Baked Chicken Breasts  

4 servings

  • 1/4 cup lime juice (2 limes)
  • 3 Tablespoons low-sodium soy sauce
  • 3 Tablespoon honey
  • 1 Tablespoon chopped chipotle chile in adobo sauce
  • 1 pounds (4) skinless boneless chicken breast

Preheat oven to 325°.

In a medium bowl, combine first 4 ingredients; add chicken and let stand for 10 minutes at room temperature.

Put drained chicken breasts on a broiler pan coated with cooking spray, reserving the marinade. Bake chicken for 10 minutes.

Meanwhile, put reserved marinade in a blender and process until smooth. Now put the marinade in a small saucepan and bring to a boil; cook for 3 minutes. Brush chicken with half of the cooked sauce; return to oven and bake another 10 minutes. Brush chicken with remaining sauce and bake the final 10 minutes or until a thermometer registers 165°.

Now would be a good time to cook up some corn on the cob.
