Blender Pancakes 
6 servings
- 3/4 cup wheat berries
- 1 cup nonfat or 1% lowfat milk
(buttermilk is great)
- 2 eggs
- 1/4 cup canola oil
- 3/4 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons honey
- 1/3 cup flour
Combine whole wheat berries and milk in a blender. Blend for 5 minutes. Add everything else and blend until well mixed.
Heat nonstick griddle skillet to medium heat. Spray with butter-flavored vegetable oil spray. Pour batter, 1/4 cup (per pancake) at a time, onto hot griddle. Cook until bubbles form and edges start to dry (about 30 seconds). Turn and cook on other side. Serve with Syrup
