Exceptional Noodle Soup4 servings
In a large saucepan, heat the oil and vegetable broth (original recipe called for 3 TBS olive oil) and saute the vegetables about 10 minutes. Add the remaining ingredients, except Noodles, and let simmer over medium-low heat 25 minutes. Add the noodles and cook additional 10 minutes
