Oatmeal Raisin Walnut Chews
Makes about 3-4 Dozen
- 2 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup quick Quaker Oats
- 1 packed cup dark brown sugar
- 1/2 cup granulated sugar
- 2 sticks softened butter
- 2 Tablespoons honey
- 2 teaspoons vanilla
- 2 large eggs
- 1 1/2 cup raisins
- 1/2 cup chopped walnuts
Heat oven to 300°.
Whisk thoroughly the flour, baking soda, salt and oats; set aside. In a large electric mixing bowl, blend the sugars at a medium speed. Add butter and mix to form a grainy paste. Add eggs, vanilla and honey; mix until light and fluffy. Add the flour mixture and blend at low speed. Add raisins and walnuts and blend at low speed until combined.
Drop dough by rounded Tablespoonfuls 1 inch apart onto an ungreased nonstick baking sheet (use 2 so as one comes out of the oven, you pop in the 2nd one). Bake 21 minutes or until cookies are a light golden brown. Immediately remove from baking sheets and cool on a rack. Store in tightly covered container.
HINT: Always use Air-Insulated pans for perfect cookies every time.
