Boston-Style
Baked Beans

This dish goes great with Old Fashioned Brown Bread.

  • 4 cups navy beans, canned (or cook
       1 2/3 cups raw small white beans)
  • 1/3 cup molasses
  • 2 Tablespoons brown sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 Tablespoon safflower oil
  • 1 large onion, sliced into rings
  • 1/4 cup water

Preheat oven to 350°.

Combine all the ingredients except the onion and the oil. Put mixture into a 1 1/2 quart baking dish. cover and bake 30 minutes.

Heat the oil in a skillet. When oil is hot, add the onion, stirring to separate the rings, and saute until brown. After the beans have baked for 30 minutes, top with onions and bake, uncovered, for another 10 minutes. Serve at once.
