Herb Roasted Potatoes
2 servings
- 1 large baking potato, scrubbed
but not peeled
- 1 Tablespoon freshly grated
parmesan cheese
- 1 Tablespoon sesame seeds
- 1 Tablespoon minced fresh parsley
- 1 teaspoon minced garlic
- 1/4 teaspoon paprika
- 1/4 teaspoon dry mustard
- 1/4 teaspoon salt
- fresh ground black pepper, to taste
- safflower oil
Preheat oven to 400°. Combine cheese, sesame seeds, parsley, garlic, paprika, mustard, salt and pepper.
Cut potato in half the long way, then cut each in half accross. Place potato in a square baking dish. Brush potato with safflower oil, and sprinkle with 1/2 of the herb mixture.
Bake in the upper third of the oven for 20 minutes. Turn potato over, brush with safflower oil, and sprinkle with remaining herb mixture. Bake another 20 minutes or until potatoes are tender when pierced with a fork. May broil 4 to 5 minutes to brown, if necessary
