Sauteed Spinach Leaves 

4 servings

  • 3/4 pound fresh spinach leaves
  • 2 Tablespoons olive oil
  • 1/4 teaspoon freshly grated nutmeg
  •    salt and pepper, to taste

Clean the Spinach leaves.

In a large nonstick pot over high heat add oil the spinach and nutmeg. Add salt and pepper, cook and toss very quickly until spinach is just wilted. Drain and serve hot.

(May break up and cook half at a time).

The spinach should be served barely cooked
