Fried Sweet Potato

  • 1 large (14-16oz) sweet potato
  • 1 Tablespoon olive oil
  • 1 Tablespoon brown sugar

Heat olive oil in a non-stick skillet. Meanwhile peel sweet potato and cut into chunks. Cook potato in oil, stirring occasionally, until tender. Stir in brown sugar and stir to melt.
