Green Beans and Red Potatoes

8 servings

  • 1 1/3 lb fresh green beans, trimmed
  • 1/3 cup water
  • 6 (about 12oz) small red potatoes
       cut into wedges
  • 1/2 cup chopped red onion
  • 1/2 cup fat-free Italian salad dressing

Put the green beans and water into a 2qt microwave container. Cover, microwave on high for 6-8 minutes or until tender.

Meanwhile, place the cut-up potatoes in a medium pot and cover with water. Bring to a boil; reduce heat, cover and cook for 5-7 minutes or until tender.

Drain green beans and potatoes, place them in a bowl. Add chopped red onion and dressing; toss to coat. May serve warm or cold.
