Lamb Burgers in Pita with Yogurt Sauce
4 servings
- 2 cups plain nonfat yogurt
- 1/2 onion, chopped
- 1/2 cucumber, peeled,seeded,diced
- 1 Tablespoon minced garlic
- 2 teaspoons fresh lemon juice
- salt and pepper
- 1 pound ground lamb
- 2/3 cup fresh bread crumbs
- 1/2 onion, chopped
- 2 Tablespoons chopped fresh parsley
- 4 teaspoons minced garlic
- 1 1/4 teaspoons dried oregano
- 4 pita breads, top 1/4 trimmed
- 4 lettuce leaves
Mix first 5 ingredients in a bowl. Season to taste with salt & pepper.
Mix lamb with the next 5 ingredients in a bowl until well blended. Season with salt & pepper. Shape into 4 patties.
Preheat broiler. Broil lamb patties until cooked through, about 4-5 minutes on each side.
Open pita rounds, line bottoms with the trimmed top (to keep the pita bread bottoms from getting soggy). Place lettuce, burger and a large spoonful of yogurt sauce in each round
Soft Bread Crumbs: To retain the light texture; take 2 to 4 day old bread and pull it apart with a fork using a gingerly motion. Do not crush bread with the hand that is holding it. To measure it, pile lightly into a cup; do not pack them down. OR Preheat oven to 250° then turn it off; put several slices bread in oven and heat several minutes; turn over; heat several minutes; use food processor to make crumbs.
