How to Make Perfect Hard Boiled Eggs
- Fresh Eggs (1 day old is preferred)
- salt
Place eggs (I always cook up an extra in case of breakage) in saucepan; add enough cold water to come to at least one inch above the eggs; sprinkle with salt. Heat rapidly to boiling. Remove saucepan from heat; cover;
let stand 12 to 14 minutes for hard-boiled;
let stand 2 to 2 1/2 minutes for medium-boiled.
let stand 1 1/2 to 2 minutes for soft-boiled;
Using a slotted spoon immediately plunge the eggs into ice-water to stop further cooking. When chilled tap the egg to crack shell; roll egg back and forth to loosen shell. Peel off eggshell.

Cut eggs in half; using a small spoon remove and discard the egg yolk. Fill the cavity with Tuna Salad or Salmon Salad.
