Pita Burgers with Mint Yogurt Dressing
2 servings
- 12 oz extra-lean ground beef
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 cup non-fat plain yogurt
- 2 Tablespoons chopped mint leaves
- 1 teaspoon white wine vinegar
or lemon juice
- 1 clove minced garlic
- 2 whole wheat pitas
- 1/2 cucumber, thinly sliced (I remove skin)
Combine the ground sirloin with cumin, coriander, salt and pepper to taste; shape into 2 burgers. Cook on grill or skillet over medium heat for 5 minutes per side (or throw them on the Foreman grill at 350° and cook for 8-10 minutes).
Meanwhile, in a bowl, stir together the yogurt, chopped mint, vinegar, garlic, salt and pepper to taste; set aside.
Cut off tops of pita; stuff each with a cooked burger; 1/2 of the cucumber slices and drizzle with the mint-yogurt dressing.
