Almost Hungarian Goulash
6 servings
- 1 teaspoon vegetable oil
- 2 cloves minced garlic
- 1 cup chopped onions
- 3 cups sliced mushrooms
- 2 cups tomato juice
- 2 16 oz. cans kidney beans,
rinsed and drained
- 1 Tablespoon lemon juice
- 1 teaspoon sugar
- 1 teaspoon paprika
- 1/16 teaspoon ground cloves
- salt and pepper, to taste
- 3 Tablespoons all-purpose flour
- 1/4 cup water
- 1/2 to 1 cup nonfat sour cream
- 8 ounces egg noodles, cooked
Heat oil in a nonstick medium saucepan over medium heat; add garlic and cook several minutes, until lightly browned.
Add onions, mushrooms, and 1/2cup of the tomato juice. Cover and cook 10 minutes, stirring several times.
Add remaining ingredients, EXCEPT flour, water, sour cream and noodles. Reduce heat to low, cover and cook 15 minutes.
In a cup, stir water into flour, mixing until smooth. Add to saucepan. Cook 5 minutes, stirring frequently. Remove from heat, stir in sour cream.
Serve over hot cooked noodles
