Sweet Carrot Salad 

6 servings

  • 2 cups finely peeled, shredded carrots
       (2 large carrots)
  • 2 Tablespoons lime juice
  • 1 Tablespoon honey
  • 1/8-1/4 teaspoon crushed red pepper

You may chop the carrots but I prefer finely shredding them. Combine all ingredients in a large bowl. Mix well and press lightly with a wooden spoon until somewhat juicy. Adjust seasoning so salad is mildly sweet and mildly hot. Serve at room temperature.

Helpful hint: If made in advance and chilled, remove from refrigerator at least 30 minutes ahead of serving so salad is not too cold.
