Sweet Carrot Salad6 servings
You may chop the carrots but I prefer finely shredding them. Combine all ingredients in a large bowl. Mix well and press lightly with a wooden spoon until somewhat juicy. Adjust seasoning so salad is mildly sweet and mildly hot. Serve at room temperature.
