Three Bean Salad

6 servings

Refreshing.

  • 1 can cut green beans, drained
  • 1 can garbanzo beans, drained & rinsed
  • 1 can red kidney beans, drained & rinsed
  • 1/4 cup sliced scallions
  • 1/4 cup red wine vinegar
  • 3 Tablespoons Splenda
  • 1 Tablespoon olive oil
  • 3/4 teaspoon italian seasoning
  • 1 clove minced garlic
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

In a large bowl, mix together the green beans, garbanzos, kidney beans and sliced scallions.

Combine wine vinegar, Splenda (or Equal or sugar), olive oil and other seasonings; mix well. Stir into bean mixture. Refrigerate, covered, overnight, stirring occasionally.
