Tuna Macaroni Salad

4 to 6 servings

  • 2 cups cooked macaroni
  • 2 Tablespoons white vinegar
  • 1 Tablespoon salad oil
  • 6 oz can water packed tuna, drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup diced celery
  • 1/2 cup peeled & seeded, diced cucumber
  •    salt & pepper to taste
  • 1/3 cup low-fat mayonnaise
  • 1/3 cup low-fat plain yogurt

Mix cooked macaroni with vinegar and oil; chill in refrigerator while preparing other ingredients.

To the chilled macaroni mixture add the drained tuna, chopped ingredients and seasonings. Mix well and chill again.

Before serving, add the mayonnaise (I like the taste of Kraft Miracle Whip light dressing) and yogurt, mix well. Serve on lettuce.
