Curried Chicken Salad  Lettuce Wraps
3 servings
  
 
- 1 6oz cooked chicken breast, chopped
 - 1 stalk celery, chopped
 - 1/2 a small red apple, chopped
 - 1/4 cup toasted pecans, chopped
 - 1/4 cup raisins
 - 1/4 heaping cup low fat salad dressing
 - 1/4 teaspoon curry powder
 - 1/8 teaspoon cayenne pepper
 -    salt & pepper to taste
 -    lettuce leaves (iceburg)
  
Combine all but lettuce in a bowl. Chill in the refrigerator.  
 
Cut the 3 large iceburg lettuce leaves in half. Spoon some of the chicken salad in center of lettuce and roll up. Enjoy!
