Curried Chicken Salad
Lettuce Wraps

3 servings

  • 1 6oz cooked chicken breast, chopped
  • 1 stalk celery, chopped
  • 1/2 a small red apple, chopped
  • 1/4 cup toasted pecans, chopped
  • 1/4 cup raisins
  • 1/4 heaping cup low fat salad dressing
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon cayenne pepper
  •    salt & pepper to taste
  •    lettuce leaves (iceburg)

Combine all but lettuce in a bowl. Chill in the refrigerator.

Cut the 3 large iceburg lettuce leaves in half. Spoon some of the chicken salad in center of lettuce and roll up. Enjoy!
