Strawberry Chicken Salad 
4 servings
- 2 cups cubed cooked chicken breast
- 2 celery ribs, thinly sliced
- 1/4 cup chopped red onion
- 1/3 cup Light Best Foods mayo
- 2 Tbsp mango chutney
- 2 tsp lime juice
- 3/4 tsp grated lime peel
- 3/4 tsp curry powder
- 1/2 tsp salt
- 2 cups sliced fresh ripe strawberries
- 4 Bibb or Boston lettuce leaves
In a large bowl, combine the chicken, celery and red onion. In a small bowl, combine the mayo, chutney, lime juice, lime peel, curry and salt. Add to chicken mixture and toss to coat. Cover and refrigerate for at least 1 hour.
Just before serving, stir in the sliced strawberries. Serve on lettuce-lined plates.
