Fresh Herb Sauce
6 servings
If you can use all fresh herbs...so much the better. If not, substitute using a 3 to 1 ratio of fresh herbs to dried.
- 1/2 cup nonfat sour cream, or non-fat yogurt
- 2 Tablespoons white unbleached flour
- 1 cup 1% lowfat milk
- 1/2 teaspoon salt
- 1/2 cup fresh herbs, using a mix including
parsley, dill, thyme, basil, oregano
Dissolve the flour in just enough water to make it smooth and flowing. Set aside until needed.
In a saucepan, heat the milk and salt over moderate heat. When it is just under the boiling point, whisk in the dissolved flour. Allow the sauce to simmer slowly, stirring constantly until it is thickened.
Remove the sauce from the heat and let it stand for a minute or so, then stir in the herbs and sour cream. Serve at once
