Swordfish Calcutta

  • 2 Tablespoons unsweetened orange juice
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon freshly ground black pepper
  • 10 ounces 3/4 -inch thick swordfish steaks
  •    vegetable oil spray

Combine first 9 ingredients in a small bowl; stir well. Place swordfish in a shallow baking dish. Brush orange mixture over steaks; cover and marinate in refrigerator 5-8 hours.

Remove steaks from marinade; discard marinade. Place steaks on rack of a broiler pan coated with cooking spray. Broil 5-6 inches from heat 10 to 12 minutes, or until fish flakes easily when tested with a fork

OR cook on a George Foreman indoor grill for 11 minutes at 300°.
