Honey & Lime Glazed Salmon
4 servings 
- 4 6oz salmon filets, skinned
- 1/4 cup honey
- 1/4 cup lite soy sauce
- 3 Tablespoons fresh lime juice (2 limes)
- 2 Tablespoons water
- 1 Tablespoon & 1 teaspoon Dijon mustard
- 1 Tablespoon canola oil
Whisk together the honey, soy sauce, lime juice, water and Dijon mustard in a bowl. Set aside.
Heat the oil in a non-stick skillet over moderately high heat (because you are using moderately high heat, you might want to consider using a spatter screen) then add salmon and cook for about 3-4 minutes on each side, until golden. Remove to serving dishes.
Add honey-lime mixture to the skillet and simmer, stirring occasionally, until it reaches a glaze-like consistancy. Pour the glaze over the salmon and serve.
