Tuna Burgers

4 serving

  • 2 large eggs, lightly beaten
  • 1/3 cup dry bread crumbs
  • 1 teaspoon dried dillweed
  • 1 Tablespoon prepared horseradish
  • 2 teaspoons dijon mustard
  •    salt & Pepper
  • 13 oz can water packed tuna
  • 2 scallions, minced
  • 1 stalk celery, chopped
  • 1 Tablespoon vegetable oil

In a bowl, mix the eggs, bread crumbs, dill, horseradish, mustard, salt & pepper to taste. Drain tuna; mix into the bowl along with the onions and celery. Shape into 4 1/2 -in thick patties.

In a non-stick skiller, heat oil over medium heat; cook patties about 5 minutes on each side or until golden brown.

Serve with either lemon juice, catsup or in a whole wheat burger bun topped with alfalfa sprouts.
