Baked Cod with
Ritz Cracker Toppings

2-3 servings

  • 16 oz skinless Cod filets (red snapper,
         bass or any lean white fish)
  • 15 Ritz crackers
  •   3 Tablespoons butter, melted
  •      salt (to taste)
  •      lemon and parsley for garnish (optional)

Preheat oven to 350°.

Put cod on a sprayed baking sheet; sprinkle with salt.

Crush the Ritz crackers so they look like coarse breadcrumbs. Mix in the butter. Pack the crumb mixture over the tops of the cod filets.

Bake for about 20 minutes.
