My Corn Relish

30 servings (6 cups)

Especially tasty with Turkey Burgers

  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 2 medium onions, chopped
  • 20 ounces fresh or frozen corn
  • 1 cup chili sauce
  • 1/2 cup sugar (OR Monkfruit)
  • 1/2 cup vinegar
  • 2 teaspoons salt
  • 1 teaspoon celery seed

Add all items in a large sauce pan. Bring to a boil, then lower heat and simmer, uncovered for 20 minutes. Chill thoroughly before serving. Will keep in refrigerator for 2 to 3 weeks. Freezes well.
